OUR STORY
Third's BBQ is more than just a food truck; it's a family legacy and a passion project brought to life by husband-and-wife duo Trey and Autumn Hollis in Royal Palm Beach, Florida.
The name itself, "Third's," is a tribute to Trey's family heritage, as he is the third generation to carry the flame of a treasured barbecue tradition. It is a fusion of three generations of recipes, cooked low and slow to create a truly "new BBQ experience" for a new generation. Trey's journey from backyard griller to award-winning pitmaster began unexpectedly after his small kettle grill was stolen.
He turned the negative into a positive, buying his first offset smoker and taking his barbecue dreams to the next level. This turning point, combined with Autumn's unwavering support, led to the creation of Third's BBQ in 2015, a venture born from a desire to share their unique Midwest and Southeast barbecue flavors with the world. Their unwavering commitment to quality and fresh, soul-cooked food has earned them a loyal following and numerous accolades.
Third's BBQ has consistently dominated local barbecue events, including multiple wins at the Copperpoint Brewing BBQ Beer Bash, with honors for Best Brisket, Best Chicken, and even the People's Choice for Best Overall. Other victories include first and third place awards for Pulled Pork at the Florida Outdoor Expo and Best Ribs at The Great Smoke Off WPB.
At Third's, the menu goes beyond the traditional, with award-winning smoked brisket, ribs, and pulled pork served alongside inventive creations like the "Tony Montana" sandwich, or the Brisket Elote Bowl.
Everything is made fresh, a promise Trey and Autumn take seriously. ​
Beyond serving the public, Trey and Autumn are additionally involved in their community. They offer catering services for events throughout Palm Beach County and often serve at local schools and organizations.
